Balsamic grilled chicken and vegetables

HOUSTON – Ingredients:


2 lbs boneless skinless chicken breasts
6 HEB Fresh Veggie Kabobs
½ cup Rustico Unfiltered Extra Virgin Olive oil (divided)
2 tablespoons Adams Reserve House All Purpose Rub
2-4 tablespoons Adams Reserve Holiday Rub
¼ -1/2 cup Central Market 4 Leaf Aged Balsamic Vinegar

Directions:
1.    Butterfly or pound chicken down to even thickness.
2.    Place in a large sealable plastic bag, drizzle with ¼ cup olive oil, and shake in Holiday Rub to coat.
3.    Toss in fridge and let sit 2-4 hours to reconstitute dried herbs.
4.    Preheat grill to medium high heat. Drizzle with remaining oil and season with House Rub.
5.    Place vegetables on one side of grill, and chicken on the other. Turn as necessary to prevent burning. Cook chicken until internal temperature reads 165 degrees, or juices run clear.
6.    Cook vegetables until they reach desired doneness. Drizzle each with 4 Leaf Balsamic Vinegar before serving.
