HOUSTON – What’s at the end of the rainbow?
A pot of gold cupcakes, of course. Katy’s own Cheese Chica is back with some creative recipes you can make for Saint Patrick’s Day. They’re so easy to make that your kids can help.
So bring home the luck of the Irish with these fun recipes: Pot O’Gold Cupcakes, Irish Nachos, and a Leprechaun Float for the adults.
Pot O’Gold Cupcakes
- Favorite Cupcake Mix
- Green Food Coloring
- White Icing
- Wrapped Rolo Candies
- Rainbow Stripe Belt Candies
Bake cupcakes according to package directions, adding green coloring to your liking. And frost with white icing to form ‘clouds.’ Place rainbow belt, rolo candy, and enjoy!
Irish Nachos with Irish Cheddar Cheese Sauce
Irish Nachos:
- Thick-cut potato chips or kettle-cooked chips
- Crispy bacon
- Sour Cream
- Chives
Irish Cheddar Cheese Sauce
- 3 tablespoons butter
- 3 tablespoons all-purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon ground mustard powder
- 1 1/2 cups milk
- 1 cup shredded Kerrygold Dubliner cheddar cheese
- black pepper
Melt butter over medium-low heat and add flour, salt, pepper, and mustard powder. Mix to form a roux and cook for about one minute. SLOWLY whisk in the milk, and cook, often stirring, until the sauce becomes thick and bubbly. Gradually stir in your cheese and remove from heat. Ladle or pour cheese sauce over a plate or tray of chips. Top with crumbled bacon, sour cream, and chives!
Leprechaun Float (for the adults)
In a cocktail shaker filled with ice, add the following:
- A shot of Jameson Irish Whisky
- Half a shot of simple syrup
- Splash of vanilla extract
Shake vigorously, and pour into a glass. Then top it off with a scoop of delicious vanilla ice cream and slowly pour in about 4oz of Guinness.
