There is no getting around turkey on Thanksgiving! Follow these tips to whip up a feast

HOUSTON – You may switch out your sides each year, but there is no getting around the turkey at Thanksgiving.

Follow these tips to help you whip up a feast!

With the holiday just around the corner, Chef Colin Shine took Houston Life inside the Sub-Zero, Wolf, and Cove Houston showroom kitchen to share some turkey tips to help you prepare an impressive and (maybe less stressful?) Thanksgiving feast.

Chef Colin said when selecting the perfect bird, “a good rule of thumb is to plan for about one pound of turkey per guest.” To ensure you have enough for seconds or leftovers, aim for 1.5 to 2 pounds per guest.

Chef Colin recommends seasoning the turkey and letting it sit at room temperature before cooking. If you’re pressed for fridge space, consider brining it in advance and keeping it cool with plenty of ice. Brining is key to achieving a juicy turkey. To save fridge space, wet brine can be done in a cooler. Brine the turkey and pack in some ice, ensuring it stays below 42 degrees Fahrenheit in the cooler. Generally, if the ice doesn’t melt, you are safe but always have a thermometer handy to double-check the temperature. If you notice the temperature rising above 42 degrees, it’s best to discard the brine and start fresh.

If you feel extra fancy, consider preparing two turkeys, a raw bird to brine and a pre-cooked one to showcase for optimal taste and texture.

Chef Colin advises against stuffing the turkey for safety and flavor. Instead, prepare the dressing in a separate dish using high-quality, rich stock for maximum flavor.
