Houston’s “Cocktail Cowboy” Matthew Medina learned to make a margarita at just 8 years old when his mother wrangled him into the role of a bartender during her “girl’s nights in” parties at their home in Cypress, Texas. This early exposure to the world of hospitality set the stage for a lifelong passion. “Mama ‘Dina has been a big influence in my life,” Medina shared, reminiscing about his early start.

A Texas native and the creative force behind the bar at Houston’s newest hot spot, Santé, Medina has made a name for himself in the beverage industry, bringing his unique flair and passion for “cocktailing” to the forefront.

As the beverage director at Santé, Medina remains grounded, often stepping behind the bar to mix drinks alongside his team. Despite the prestigious title, he considers himself a bartender first and foremost. “It’s really, really fun,” he said, emphasizing his love for the craft and the camaraderie it brings.

Medina’s career has been marked by a willingness to learn and adapt. He spent summers working at his aunt’s restaurant in Burnet, Texas, honing his skills and developing a strong work ethic. This hands-on experience has been pivotal in shaping his approach to the industry.

Reflecting on his success, Medina expressed disbelief and gratitude. “I’m still going through the motions of, like, this is real,” he admitted. His philosophy centers on authenticity and perseverance, and he encourages his team to “be yourself, be true to yourself, have fun, but always do the right thing.”

Medina is excited about new opportunities beyond Houston, including a project in Orlando. However, he remains committed to his roots, stating, “Houston is definitely home.”

Throughout January, Santé offers zero-proof versions of their most popular cocktails to help those committing to Dry January still have a fun night out.
