Meet the Houston chef bringing hope and hot meals to disaster zones worldwide

HOUSTON – Chef Wade Schindler, Executive Chef of Cotton Culinary, knows how to cater a great party. He also knows how to feed people when they need it most: after a natural disaster strikes.

“You have to go right then and there; you have no time to think about yourself,” said Schindler of the intense nature of his job.

As part of the Global Disaster Relief and Recovery Teams at Cotton Holdings, Wade is one of the first people to arrive onsite after a disaster, quickly assessing the situation while tents are going up and making a game plan to feed a large number of people -- often in the thousands, multiple times per day.

“The kitchen never stops. It’s a lot, but we plan for it every day,” added Schindler, who finds himself in disaster areas sometimes for months at a time.
