Local nutritionist shares her guide to packing a healthy and tasty lunch

HOUSTON – If you’re having a hard time getting back into the routine of a new school year, you can take the stress out of meal planning with this easy to remember guide for lunch.

Registered Dietitian/Nutritionist Mary Ellen Phipps is sharing her “formula” to create snack meals.

Phipps suggests including one healthy fat, one fruit, one veggie and one cracker/crunchy type food.

She says this simple meal-time solution works for anyone looking to increase their fruit and veggie intake.

Especially for busy parents/caregivers - who are planning multiple lunches a week, for kids to take to school.

Phipps is also sharing a healthier twist to the classic peanut butter and jelly sandwich.

This recipe features her homemade grape jam, made with just one ingredient - GRAPES!

She puts sliced grapes in a pot on the stove, covers them and cooks them down for 15-minutes on medium heat.

After that step, she removes the pot from the stove and mashes the grapes slightly.

Then returns the pot to the stove, uncovered, to cook for another 10 minutes.

Phipps also said that while we do want a nutritious lunch for our kids, we also want it to be something that tastes good, that they look forward to, and that helps them feel comfortable.
