Shrimp Carbonara

Preparation Time: 5 minutes
Cooking Time:  15 minutes

1lb  Shrimp
2 Tablespoon Avocare Avocado Oil
1 tablespoon Adams Reserve House Rub
1 ½ cups half & half or heavy cream
½    cup fresh Parmesan cheese
½   jar Better than Good Bacon Jam

1. Toss shrimp with oil and rub in a small bowl; set aside.
2. Place cream, bacon jam  and Parmesan cheese in a 3-quart pot over Medium-High heat; stir 5 to 10 minutes or until mixture begins to thicken and reduce (enough to coat spoon).  Remove pot from heat and  cover to keep warm.
3. Heat a large skillet over Medium-High heat until hot; sautee shrimp  in          hot skillet 3 to 4 minutes or until cooked through. Stir shrimp into sauce.  Serve immediately over your favorite cooked pasta.

 

 

Grilled Pineapple
Preparation Time: 5 minutes

INGREDIENTS

   1 each        Fresh Pineapple, peeled, cored and sliced lengthwise ½” thick
   1 Tbsp        Montana Mex Sweet seasoning salt
   ½ Cup        brown sugar
  
STEPS

1. Preheat Grill.
2. Toss pineapple in brown sugar/sweet salt mix
3. Spray pineapple slices liberally with pan-spray: grill on each side 3-4 minutes and flip over, grilling another 3-4 minutes. When pineapple has noticeable grill marks, remove to a platter, and let rest for 10 minutes.

Slice into chucks, sprinkle with a little more sugar/salt mix to serve.
