Bacon Jam Shrimp N' Creamy Grits

HOUSTON – Ingredients:
1 lb shrimp, raw
3/4 jar Better Than Good Bacon Jam
¼ cup onion, chopped
¼ cup bell pepper, chopped
1 Tbsp. Ottavio Extra Virgin Olive Oil or Grapeseed Oil
1 Tbsp. Adams Reserve House Rub-divided (season shrimp and grits to taste)
17.5oz (drained) can white hominy
2 Tbsp. unsalted butter
1 cup heavy whipping cream

Directions:
· Rinse hominy and drain well.
· Bring cream to a light simmer, then add hominy, butter and rub to taste, and cook for about 5 minutes. Pour into a food processor or blender to blend into desired texture-while hot.
· Meanwhile, heat oil over med-high heat in a medium sized pan.
· Cook veggies in oil until onions are translucent-about 5 minutes.
· Season shrimp with rub and add to veggies, stir frying until tails curls-3-5 minutes.
· Spoon in bacon jam for another minute until shrimp are glazed. Serve big spoonfuls of shrimp mixture over grits.
